PROTEIN BANANA BREAD

I am a sucker for Banana Bread but I need lower carb and gluten free! This is such a yummy one so here is how I make it!!

INGREDIENTS

3 ripe bananas

2 eggs

1/4 cup sugar free maple syrup

1 tsp vanilla extract

1 cup almond flour

2 scoops tasteless protein powder by Feel Good

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon and nutmeg (or measure with your heart if you know you like more)

Pinch of salt

Optional mix-ins: chopped nuts, chocolate chips (I didn’t go there this time)

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a mixing bowl, mash the ripe bananas until smooth.

  3. Add eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well.

  4. In a separate bowl, combine almond flour, protein powder, baking powder, baking soda, cinnamon, and salt.

  5. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

  6. If desired, fold in chopped nuts or chocolate chips for added texture and flavor.

  7. Pour the batter into the greased loaf pan and spread it evenly.

  8. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
